为什么不能用if?理解成“如果你到那儿,可以帮我带一点饮料么?”这样为什么不行?
还有,so做连词时的用法就是方式状语从句中so的用法么?so和so that 仅仅是so that引导的从句带有情态动词么?

I thought 是主句,you were American是宾语从句.当主句是过去时的时候,宾语从句也要用过去的时态.
楼主你可能把这点与助动词跟实义动词的关系弄混了.在一个简单句中,当助动词用了过去式,实义动词要用原形.
if只是表示一种假设,不一定是事实.而前面那个人已经说了他要去市场,是事实.所以这题只能用since（既然）.
so可以引导方式状语从句,也可以引导结果状语从句.如：
I'm ill. So I can't go to school. (引导结果状语从句)
so...that中so是形容词或副词,表示程度.that引导的才是结果状语从句.
